Hard, cooked and slow-maturing semi-fat cheese, produced with thermised milk with fermentation acid coagulation, from cow's milk coming from two daily milkings. The rind is hard, 3/6 mm thick and has an intense yellow colour. The internal paste is slightly grainy and straw-coloured. The flavor is characteristic of mature cheese, intense but pleasant.
