The Tonda flour blend was developed specifically for round pizza, combining Type “0” Soft Wheat Flour, known for its aroma and nutritional value, with “Carosella” Wholemeal Soft Wheat Flour. This ancient grain, dating back to Roman times, is renowned for its richness in micronutrients and its intense fragrance. The addition of dried rye sourdough helps to lower the pH of the dough, thus improving the activity of the yeasts.
With Tonda, a unique pizza is obtained thanks to a very high hydration dough, with a minimum of 70% hydration and direct processing. The final product is a white pizza, rich in fibre, with a distinctive texture and flavour.
Ideal for medium-long maturations, this blend reaches perfection after at least 24 hours of maturation. However, for optimal results, a 36-hour maturation with 70% hydration is recommended. Tonda can be used with both the direct method and the pre-ferment, offering versatility that meets the different needs of bakers and pizza makers.
