Mortadella boasts a centuries-old history, its name dates back to Roman times and is the best known cooked salami of the Bolognese tradition, with historical origins dating back to the 10th and 6th century. Over the centuries, the recipe has changed: it is obtained from a mixture of pork, lard of diced pork fat (throat for the finest products), salt and whole or ground pepper. The whole is very finely shredded, stuffed into natural or synthetic casings and follows a prolonged cooking that enhances its aromas and flavors. The flavor is unique: delicate, unsalted.
