Mafaldine, or Reginette, are long, curled pasta with a ribbon shape on both sides, originating from Naples and once called "Fettuccelle Ricce". Named in honor of Princess Mafalda of Savoy, they are distinguished by the irregular consistency between the smooth part and the curled part after cooking. This format is versatile and lends itself well to condiments such as Neapolitan ragù with ricotta, game sauces, fish sauces with shellfish and seafood, and white sauces with soft cheeses enriched with curry, saffron, horseradish or ginger.
