The most famous wine of literature and history. also mentioned by Publio Virgilio Marone (Latin poet of 70 BC), the Falerno, deep red, comes from Aglianico and Piedirosso grapes harvested after careful selection in the hillside vineyards of the San Castrese estate, on the slopes of the Roccamonfina volcano, in the province of Caserta
Format: 0.75 Lt
Grapes: Aglianico 80%, piedirosso 20%
Soil: Volcanic with a good supply of phosphorus, potassium and trace elements, at 140 meters above sea level.
Harvest:
Aglianico: Third decade of October
Piedirosso: second decade of October
Vinification: De-stemming followed by maceration of the skins at a temperature of 25/26 ° C for about 20/25 days. Numerous replacements and delestages are performed daily during fermentation. At the end of the alcoholic fermentation the malolactic fermentation takes place.
Aging: A part of the wine, 50%, is aged in Allier barriques, new for a third; the remaining 50% rests in traditional oak barrels for a period of 10/12 months. A period of aging in bottle follows.
Organoleptic characteristics:
Deep red color, it has an intense and complex bouquet of violets, black fruits, cherries, blackberries and raspberries.

Serving suggestions:
Excellent with aged cheeses, red meats and roasted white meats.
Serve at the ideal temperature of 16 -18 ° C
