The Falerno del Massico DOP Rosso di Villa Matilde is a wine that embodies the history and tradition of Campania viticulture. Obtained from a blend of Aglianico (80%) and Piedirosso (20%) grapes, grown on volcanic soils rich in phosphorus, potassium and microelements, this wine best expresses the characteristics of the territory. The Aglianico harvest takes place in the third ten days of October, while that of Piedirosso in the second ten days of the same month. After destemming, the must undergoes maceration of the marc at a temperature of 25-26°C for about 20-25 days, with frequent pumping over and delestages. Malolactic fermentation completes the winemaking process, helping to make the wine soft and well-structured. The refinement takes place in two phases: 50% of the wine matures in Allier barriques, a third of which are new, for 10-12 months, while the remaining 50% rests in traditional oak barrels. A further period of refinement in the bottle follows, which allows the wine to develop a complex and harmonious organoleptic profile. Falerno del Massico has a deep red color and an intense and complex aroma, with notes of violet, black fruits, cherry, blackberry and raspberry. On the palate, the wine is full, elegant and harmonious, with a perfect balance between freshness and structure. This wine pairs perfectly with mature cheeses, red meats and roast white meats, enhancing the flavors of the richest and most flavorful dishes. Serve at the ideal temperature of 16-18°C to best appreciate all its nuances.
