Pecorino Romano is a gastronomic jewel with a history that dates back to the Roman Empire. It is mainly produced in Sardinia, but also in Lazio and in the province of Grosseto. This DOP cheese is made with milk and rennet from local flocks and has a smooth rind and a straw yellow or white paste, compact or with small holes. With 403 calories per 100 grams, it is naturally lactose-free thanks to the long maturation. It has a rich aroma and an intense, spicy flavour, perfect for traditional dishes such as Carbonara, Cacio e Pepe, Amatriciana and Gricia, or simply grated on raw vegetables.
