Orecchiette, also known as "trasciati", are the most typical pasta shape of Puglia. Handmade with white flour, durum wheat semolina and water, they have the shape of small discs that are slightly concave in the centre. Traditionally accompanied by broccoli or potatoes and seasoned with tomato sauce and pecorino cheese, or simply with garlic and oil. They are also ideal with vegetable or lamb and ricotta ragout.
