Colatura d'Alici di Cetara is a precious condiment of the local gastronomic tradition, derived from anchovies fished with the 'cianciolo' technique in the Gulf of Salerno. This intense amber liquid is obtained through an ancient process of maturation of anchovies in salt, preserved and handed down by the fishermen of Cetara from generation to generation. The anchovies are layered with sea salt in the "terzigno", an oak wood container, and covered with a wooden disk and weighed with sea stones. During the maturation process, the resulting liquid, due to the pressure and fermentation of the anchovies, comes to the surface. This distillate, with its strong and full-bodied flavour, is known for enriching numerous Mediterranean cuisine dishes with a unique and genuine touch. The Colatura d'Alici di Cetara is recognized and protected as a traditional agri-food product by the Italian Ministry for Agricultural Policies, testifying to its cultural and gastronomic importance.
