Neapolitan Cicoli, or ciccioli, is a food made from the fat present in the pig in the preparation of lard. The fat, separated from the rind and diced, is cooked over a slow and constant heat, until boiling, for no less than three hours, in copper or steel pots, so as to melt the fat and allow the water contained to evaporate. When the pieces of fat have acquired a golden blond color, they are poured into a cloth, squeezed and finally added with aromas: cloves, cinnamon, bay leaves, pepper, nutmeg and salt in doses that vary depending on the pork butcher. The strained part is the lard, the residual solid part is the Neapolitan cicoli. The squeezing can take place in wooden or steel presses or between boards hinged to one side; after pressing the ciccioli can be left in a mold or crumbled while hot. Neapolitan cicoli can be easily preserved for up to three or four months. Sold vacuum-packed in 4kg pieces
