Fiano Sannio D.O.P. from the La Guardiense winery is an excellence of Sannio Beneventano, in Campania. This white wine is produced with Fiano grapes harvested manually in the first ten days of September. The vines are cultivated with the Guyot training system on a 15 hectare vineyard area, with a density of 4000 plants per hectare. At sight, the wine has a straw yellow color with green reflections. On the nose, it expresses intense floral notes of white flowers and hints of aromatic herbs. In the mouth, it offers a pleasant elegance and great balance, making it ideal to accompany dishes with a sweet tendency such as spaghetti with anchovies, baked fish on a bed of potatoes and succulent fish soups. The winemaking takes place through soft pressing of the grapes and an inoculation of selected yeasts, with fermentation carried out entirely in steel at a controlled temperature of 15-18°C for approximately 20 days. Malolactic fermentation does not take place, allowing the wine to maintain its freshness. Aging takes place in the bottle, with bottling taking place in February of the year following the harvest. With an alcohol content of 12%, this Fiano is a refined and versatile wine, perfect for any occasion.
