Malt flour is a malted wheat flour with a high diastatic power (minimum 14000 Pollack Units), rich in diastatic enzymes which improve the leavening of baked products. This flour promotes homogeneous leavening and contributes to obtaining a richer flavour, a more intense aroma and a more crumbly crust. Its high sugar content rapidly enhances the action of the yeast, strengthening the structure of the gluten. Dosage: as an adjuvant, use 1-5 g for each kg of flour; as the main ingredient, use 40-60 g for each kg of flour.
