Mortadella is the most seductive of cured meats, and it is already so in its appearance: when it is whole, pink and compact, it is a reassuring presence and always a protagonist. Placed softly on the plate, it captures the sense of smell first of all, thanks to the aroma that promises sure satisfaction for the palate that will enjoy it. The “Due Torri” produced by Alcisa is the queen of mortadellas and stands out for the high quality of the pork cuts used (shoulder and loin) and the greater leanness due to the smaller quantity of lardons; it is produced with the most modern technologies but in full respect of tradition: the modern version of the product is a very fine mixture of lean pork and fine throat or cheek lardons incorporated as cubes, mixed, stuffed into suitable casings, flavoured with salt, black pepper and spices according to the ancient and original Bolognese recipe.
