Dried yeast, also known as Criscito, is a natural product obtained by kneading type "0" soft wheat flour and water, acidified by a complex of yeasts and lactic bacteria. This mix starts the fermentation of doughs for bakery and pastry products. However, during drying, Criscito becomes inactive and needs to be reactivated using an active yeast, such as is commonly used. 20 to 50 grams are added for each kilo of flour, in addition to normal yeast. With the Criscito, you can easily obtain naturally leavened (mixed) baked goods without having to deal with refreshments, long waits and storage problems. This improves the quality characteristics of your baked products, offering a more pleasant flavor and aroma, better preservation and greater digestibility.
