English: OTTOUVE Wine - Gragnano della Penisola Sorrentina DOC Production Area: Produced in the municipalities of Gragnano and Pimonte, in the province of Naples, in the heart of the Sorrento Peninsula. Grape Varieties: A unique combination of Piedirosso, Aglianico and Sciascinoso for 60%, together with local varieties such as Suppezza, Castagnara, Surbegna, Olivella and Sauca, which make up the remaining 40%. Soil: The wine is born on loose and lapillose soils, typical of the volcanic area. Altitude: The vineyards are located at about 300 meters above sea level, benefiting from an ideal climate for growing high quality grapes. Cultivation: Traditional system of Raggiera and Espalier, which guarantees a high quality of the fruit. Yield per Hectare: About 80 quintals per hectare, guaranteeing a selected and quality production. Harvest: The grapes are harvested manually with extreme care. The 2015 harvest began on September 28 and ended on October 8. Vinification: After destemming and crushing, the grapes undergo maceration with the skins for 5 days, followed by soft pressing and alcoholic fermentation at a controlled temperature of approximately 20°C. Maturation: The wine from the 2015 harvest was bottled on December 1, 2015. It is recommended to consume it within two years of bottling to best appreciate its sensory characteristics. Organoleptic Characteristics: A lively and brilliant red wine, with an aromatic profile reminiscent of fresh red fruit. On the palate it is fresh, with a light effervescence that makes it particularly pleasant and versatile. Food Pairings: Perfect to accompany pizza, fried fish and meat, and typical dishes of regional Campania cuisine. It should be served at the ideal temperature of 8°C.
