Il Principio Aglianico Rosso by Terredora Dipaolo is an authentic and refined expression of the Aglianico grape variety. Made with 100% selected Aglianico grapes, this wine represents the excellence of the Campania winemaking tradition. Production involves an average maceration of the grapes for 8-10 days, followed by alcoholic and malolactic fermentation. The wine then ages for 12-18 months in small oak barrels, and is further refined for 24-30 months in the bottle, developing a unique complexity and a harmonious structure. To the eye, it presents itself with an intense ruby red color, enriched by deep reflections. On the nose, it releases complex aromas that range from the varietal notes of black cherry, wild blackberry and plum, to the spicy and toasted hints that emerge with aging. On the palate, Il Principio reveals itself as elegant and soft, with a persistence that leaves its mark. The notes of red fruits, plum jam, cloves and black pepper blend together in a rounded and harmonious whole, making it suitable for long conservation. Perfect to accompany robust dishes, Il Principio pairs ideally with meat-based soups, cured meats, white and red meats, roasts, game and venison. It is particularly suitable with woodcock with truffles, hare and medium-aged cheeses such as caciocavallo. Serve at the ideal temperature of 18-20°C to best enhance all its characteristics.
