"I Borboni" Asprinio D'Aversa is a white wine made exclusively with Asprinio grapes, grown in the sandy soils of volcanic origin in the Agro Aversano and Giuglianese areas. The vineyards are located 80 meters above sea level and are trained with the ungrafted Sylvoz system, guaranteeing a yield of 8000 kg per hectare. The harvest takes place manually in boxes between the end of September and the beginning of October. The winemaking involves fermentation at a controlled temperature for 15 days, followed by maturation in steel for 6 months and refinement in the bottle for 30 days.
