Cassata is considered one of the most important and delicious sweets of Sicilian pastry. Its origins are very ancient, it appears already at the time of Arab domination; the same name cassata is believed to derive from the Arabic term Qas'at which simply means bowl or basin.
Initially this dessert was nothing more than a shortcrust pastry filled with sugared ricotta; over time, new ingredients were introduced such as pasta reale, chocolate, sponge cake and candied fruit, so the cassata gradually took on the form we all know today. For a long time the specialists in the preparation of this delicacy were the Sicilian nuns and the cooks of the noble courts.

Ingredients: Sponge cake (whole shelled EGGS, pasteurized and homogenized EGG yolks, sugar, 00 WHEAT flour, potato starch, leavening powder (raising agents E405i, E500i, starch), vanillin), alcoholic syrup (Water, sugar alccol), sheep's milk ricotta (MILK), sugar, dark chocolate drops (SOY), candied orange, (orange peel, glucose syrup, fructose, sugar) ALMOND paste (sugar, ALMONDS, glucose), green coloring (vegetable oils, coloring E102, E133).
