The almond colombelle are inspired by the Tuscan pastry tradition and reinterpret it in a new and cheerful form. Even today the almonds are slowly worked in stone to make the dough soft and delicate, ready to be covered with a veil of sugar and to take on the characteristic shape of small and sweet doves.
