The first November in Naples there is the custom of making nougat of the dead (also called nougat of the first of November). It is a soft nougat made of chocolate that is found in many variations, the most popular are hazelnut and gianduja.
Appreciated and consumed by the well-to-do classes, as well as by the poorer ones, nougat was already known at the time of the Romans, as evidenced by some writings by the historian Tito Livio.
