The roasted chestnuts are a typical product of the Christmas holidays ; formerly were prepared only in Irpinia , nell'Avellinese , an area known for growing chestnut , using the ovens found in rural homes. Today they are known in the rest of Campania, but their technique of production has remained unchanged : in places called " gratali " fresh chestnuts still in their shells , are placed on wooden planks , under which fires were lit powered by chestnut wood . The fire must be left switched on for 15 days , so as to make dry completely chestnuts , that after ranging roasted in the oven for about 30 minutes. At this point , to season them and rehydrate , are immersed in tanks of plastic filled with water or water and wine .
