Soft wheat flour type "00". Petra 6305 is a strong flour (W390-420), its applications range from leavened pastry to savory ones. Its exceptional strength characteristics make it ideal also in the preparation of pre- doughs such as chariots and poolish.
The characteristics of the gluten mesh developed by Petra 6305 mean that this flour can also be used in combination with other Petra flours.
