Method of use:
Using a more or less refined type does not change the intended use but mainly the organoleptic profile and the final appearance (less refined flours tend to rise less but to be tastier than refined ones). On the other hand, the final result changes a lot if a more "strong" or less "strong" flour is used. The former resist well to very long leavening and prolonged mechanical stress (like this red Caputo), while the latter do not have this ability and are therefore more suitable for products that require short leavening, or for desserts where a conspicuous friability is desired. (shortcrust pastry, sponge cake, etc. etc.).
