Walnuts, especially Sorrento variety walnuts in shell, have very important organoleptic and nutritional properties for our health. However, since these are highly energetic foods (about 650 kcal per 100 grams of walnuts), they should be consumed with a certain parsimony (recommended dose: 10 grams - 15 grams per day). The high density of unsaturated fatty acids, predominantly polyunsaturated fatty acids, makes them useful for reducing cholesterol levels and preventing some cardiovascular diseases. Among the species of walnuts, the most valuable and widespread in Campania are Sorrento walnuts in shell. The two most common ecotypes are: one elongated, regular, slightly pointed at the apex and blunt at the base, the other rounded, smaller. The valves, in both cases, are smooth, of reduced thickness, the fruit consists of the kernel with a very pleasant flavour, slightly oily and creamy white in colour. One of the main characteristics is that, unlike other cultivars, the kernel can easily be extracted intact, which makes it particularly appreciated by the confectionery industry and consumers.
