It is a typical salami of Lazio, also called raw mortadella. Only the finest lean meats of Italian pig are finely minced and mixed with lardons cut with a knife tip. Attention to the stages of stewing, drying and maturing, which takes place in special cages, give this salami a characteristic flattened shape, slightly curved. You can taste it in the sweet version with a decided taste, however, given by the black pepper in grains, and in the spicy version in which the fennel and the chilli are tasted. The slice is rather long with an oval shape.
