The Cetara anchovy slicing, the heir of the Roman Garum, is an amber liquid obtained from the ripening of salt algae, according to an ancient process, handed down over time, which respects simple but scrupulous antique rules.
The algae that are caught are "sliced", eviscerated and put under salt. As they ripen within the interior, a liquid that is collected and exposed to the sunshine emerges on the surface. After 6 months, the liquid is poured back into the water, poured through all the layers and harvested through a hole in the bottom.
The casting is ready to serve typical and sought-after dishes.
