II Bue Apis is produced exclusively from grapes of Aglianico del Taburno from a century-old vineyard located in the district "Pantanella" about 1000 meters from the Taburno winery.
This vineyard bears witness to the ancient presence of Aglianico on the slopes of Mount Taburno. The vinification in purity of the grapes obtained from it, original clone of the so-called Aglianico bitter, is one of the paths that the Cantina del Taburno has undertaken to enhance the extraordinary potential of this ancient vine.

Soil: calcareous clayey marls
Harvest period: first ten days of November, management of the manual harvest.

VINIFICATION: The grapes harvested at the time of their complete maturation, after destemming and crushing, undergo fermentation with a 40-day maceration. Pre-bottling method and aging: 18 months in new oak and chestnut barrels
ORGANOLEPTIC CHARACTERISTICS
The color is purple red. The smell is reminiscent of blackberries and blackcurrants. The taste is full and balanced with melted tannins and a long finish of roasted coffee, tobacco and spices.
