Area of origin: The grapes come mainly from
Côte des Blancs and Montagne de Reims, are the centerpiece of
all his cuvée.
Delicate and fragile , Chardonnay expands and offers
measure of its aromatic richness only during a
slow maturation in the coolness of Crayères : up to three years
for non-vintage wines , from nine to ten years for a
Dom Ruinart .
Grapes: 40 % Chardonnay , 57 % Pinot Noir and 3% of
Pinot Meunier, comprising 20-25 % of reserve wines
of the two previous years .
The Chardonnay grape is the soul of the Maison Ruinart .

This maturation presents a challenge to the ability of
Chef de Cave, it must in fact be able to tame the
whims of this vine with unique characteristics.
It is these qualities to give the Ruinart taste a
personality all its own.
Color : Robe bright and clear yellow color with greenish
golden . The brightness is considerable, sustained effervescence ,
with a very persistent perlage .
Aroma: At the onset the wine is fine, fresh, fruity ,
characterized by notes of white fruit ( pear, apple
rennet ) , apricot , but also of hazelnuts and almonds
fresh . Some floral and spicy notes give a
further complexity.
The second sniff test revealed significant intensity , on a
fund more marked aromas of brioche and biscuit.
Taste: The taste is very crisp . The wine is balanced , very
Round and fleshy , with an attack characterized by aromas of
ripe fruits ( queen claudia and nectarine ) . The finish is long ,
well integrated dosage gives way to the freshness
characteristic of Chardonnay , very present in the assembly .

Serving temperature: 8-10 ° C with glass tip
Matching: For a first course is ideal with poached oysters hot or
with the scallops gently sauteed .
It may well also accompany a sole meuniere ,
a capon breast (or chicken ) stuffed with dried fruit.
Among the cheeses goes greedily to one or chaource
Langres . Cheese maturing short, very creamy .
