The grape of the Greco di Tufo vine is characterized by a content of coloring matter superior to the other white grapes of Campania. For this reason, when ripe it has a beautiful golden yellow color with amber tones on the sun side. The must is yellow-ocher tending to reddish. The wine, if not subjected to clarification, is an intense yellow-gold. Giallo d’Arles is an extreme and rigorous interpretation of the Greek tuff. It is a cru produced with grapes from the vineyard of the Arles yellow which is found in Tufo (Avellino).

Vinification and elevage:
After a long pressing of the whole bunches, the draining must, strictly protected from oxygen, it is separated from that of press and clarified for natural sedimentation. Fermentation 70% of it takes place in stainless steel vats and 30% in barriques new oak. Following a period of eight months of elevage on fine lees regularly resuspended in wine.

Organoleptic characteristics:
The ancient yellow-gold color, typical of the denomination, is made even more intense by the short stay, during fermentation, in small oak barrels and by the complete absence of fining measures. It is a white wine with the structure of a red, powerful and refined, characterized by a deep minerality melted with notes of apricot and quince jam and a full and fresh taste.

Pairings: excellent with fish dishes, vegetable risotto, seafood risotto, steamed fish-shellfish, eggs and savory pies
