Produced with grapes selected from a single vineyard, More Maiorum is the maximum expression of the Fiano grape. The wine represents a May to the tradition of white winemaking in Irpinia: hence the name, which evokes "the respect for the customs of the ancestors"
VINEYARD AND LAND: Lapio, with south-west exposure and a
clayey-calcareous soil, with a strong presence
of skeleton. The altitude is 400 m s.l.m.
PERIOD AND HARVEST SYSTEM: End of October, manual harvest.
VINIFICATION AND AGING: White vinification with fermentation in barriques. Aging for six months in acacia barriques and around 24 months in bottle.
Organoleptic characteristics: intense straw yellow color.
The nose has a complex bouquet, with mineral and spicy notes that blend with the floral notes of lime and acacia, honey and romatic herbs. The taste in the mouth with mineral notes reminiscent of apricot and orange peel are followed by a very long finish of toasted hazelnut.
Food matches: Appetizers Buffal mozzarella and fish and shellfish based dishes. First courses Pasta and risotto with seafood or legumes and vegetables. Second courses white meats and fresh and seasoned cheeses.
Serve at the ideal temperature of 12-14 ° C.
