Withering: The bunches are placed in small boxes
and bring to a ventilated room for 8 weeks in order to obtain the necessary sugar content.
Fermentation and maturation: In barrique for 6-8 months.
Aging: 12 months in the bottle.
Organoleptic test: Crystal golden yellow color. On the nose evident
soft sensations of withered apricot and small white flowers. In the mouth the silkiness and softness typical of the vine are enriched by a remarkable acid and mineral shoulder. The finish is long and reminiscent of candied citrus fruits, cinnamon and the skin of white peach.
Gastronomic combinations: Perfect to accompany products from
pastry, especially cakes with creams. Also excellent with very mature cheeses and with blue cheeses.
