One of the tastiest ragouts of the Neapolitan tradition. Genovese is a sauce based on meat, white wine and above all onion with a creamy consistency given by a long and slow cooking. It is traditionally prepared for festive lunches as a condiment for pasta; try it with hand-broken ziti.
