"Castrum" was the town with medieval fortifications, what San Severo was originally. Our Castrum is the oenological metaphor of San Severo DOP as the origin of our passion. This wine with a fresh and dry sour taste, a vinous and delicate aroma, is obtained from grapes of the Bombino, Trebbiano and Malvasia varieties. It is ideal with appetizers, light or fish-based dishes
VINIFICATION
It takes place with selected grapes sent to the fermentation of only the juice obtained by pressing them gently and taking care to limit the
contact with the air to avoid oxidative phenomena. The steel tanks kept at low temperatures house the fermenting must which will thus release all its aromas.
TASTING NOTES
Colour: pale yellow with light greenish hues.
Bouquet: floral aromas, ranging from white flowers to yellow flowers. Taste: flavour: fresh, medium bodied, quite persistent and dry.
MATCH
First courses: it is the perfect wine to accompany risottos with vegetables and fish. Ben approaches to
flans and savory first courses. Second courses with cooked seafood or white meat.
