The dried yeast, also called "Criscito", is a natural product that is obtained by mixing "0" type wheat flour and water, acidified by a complex of yeasts and lactic bacteria, able to start the fermentation of the dough for products of the bakery and pastry shop. Since it no longer becomes active in drying, the Criscito needs to be reactivated by using an active yeast, the usual one, in the dough. Add 20 to 50 grams per kilo of flour, in addition to normal yeast.
