The Cicoli Neapolitans, or greaves, is a food of the fat in pork lard in preparation.
Fat, separated from the rind and made into cubes, is put to cook over a low and constant heat, until boiling, for not less than three hours in copper pots or steel, so as to melt the fat and allow ' evaporation of the water. When pieces of fat bought a golden blonde color are paid in a cloth, squeezed and finally added aromas: cloves, cinnamon, bay leaves, pepper, nutmeg and salt in varying doses depending on the butcher.
The part is cast lard, the solid part remaining are the Neapolitan pork scratching. Wringing can take place in Torchietti wood or steel or between hinged axes to one side; after pressing greaves can be left in tile or crumbled hot. The cicoli Neapolitans are kept safely for up to three or four months.
