The smoked buffalo milk provola is a version of the Mozzarella typical of Campania. The buffalo milk mozzarella is subjected to smoking with a natural process: the mozzarella are tied two by two to a stick, straw and bay leaves are arranged on the bottom and covered with wet sacks so as to produce smoke and not fire. The buffalo milk mozzarella thus smoked is then placed in tanks full of the preserving liquid derived from the spinning, which in addition to salting them also serves to clean them of any ash residues.
