The smoked buffalo morsels are a variation of the classic mozzarella morsels. Compared to classic mozzarella, the bocconcino is small in size and reaches a weight of 50 g. Mozzarella, on the other hand, is broken into different cuts: 125, 250 and 500 g. They are excellent to be enjoyed as a snack or as an appetizer together with cured meats.
The smoked buffalo morsels are naturally smoked milk pearls and therefore have a golden color. They have a very thin crust, which surrounds the layers of internal dough. The characteristic smell of smoking envelops the scent of milk and cream, making the flavor of the buffalo morsels unique. The peculiarity of this stretched curd cheese is its callous texture and the abundance of milk it releases. One is always fascinated by the rounded shape of the mozzarella morsels and the strong smell of smoking.
