Provenance:
Autochthonous Campano vine, cultivated in the province of Benevento, in tuffaceous and fresh soils. It is commonly called "per e palummo" which means pigeon's foot due to the similarity of the red foot of the bird to the peduncle that binds to the berry.

Oenological technique:
The harvest of these grapes takes place in the third decade of September, when they are well ripe and ready to be pressed. Fermentation with maceration takes place at a controlled temperature of 17/18 ° C with a duration of about 7/8 days and then fermentation in the tank continues.
