Manual collection, in small 15 kg boxes in correspondence
of the full aromatic maturation of grapes.
Vinification and elevage:
After a long pressing of the whole bunches, the draining must,
strictly protected from oxygen, it is separated from that of
press and clarified for natural sedimentation. Fermentation
70% of it takes place in stainless steel vats and 30% in barriques
of new oak. This is followed by an eight-month period of elevage on
fine lees regularly resuspended in wine.

Organoleptic characteristics
Golden yellow hues and aromas ranging from notes of apple, pineapple, aromatic herbs and wild flowers to refined salty and mineral tones. The enveloping structure releases delicate mentholated and toasted sensations also resulting from the short stay
